Roasted Squash and Zucchini Enchiladas + OOTD $15 Tee Shirt



Since Matt has become a pescatarian it has really inspired me in the cooking department.  He is coming up on one year of being meat free at the end of this month.  I am really proud of him he has changed his diet so much in the past year and I think he feels much better because of that.   As I have mentioned before I am not a vegetarian but I do prefer to eat mainly plant based meals.  I still eat meat I just don't cook with it that often.  Matt chose not to eat meat because of ethical reasons and the treatment of animals and I don't eat much meat because I honestly just prefer veggie based meals.  I love any and all veggies and I physically feel better when I don't eat much meat.  So at home I cook mostly meat free meals.  Now I do still sometimes cook meat for the kids.  They still eat plenty of chicken and Sterling always wants red meat so occasionally I cook him beef.  

Cooking meat free meals that are filling and taste good can be such a challenge but I have really enjoyed trying out new recipes and creating some of my own.  I always anxiously await Matt's approval after the first bite, hoping it is a winner.  We have had many flops but also found lots of great recipes that we now cook on rotation. 

Mexican food to me is an easy genre to cook filling vegetarian meals.   The cauliflower tacos I shared last week were so good I knew it would be hard to come up with something that delicious but these enchiladas sure come close!  They are full of so many amazing flavors and they are actually filling too.  Now if you wanted to add meat I think shredded chicken would be great added to these but they really are amazing without the meat.

|| R O A S T E D   S Q U A S H +  Z U C C H I N I   E N C H I L A D A S ||

- 2 small yellow squash
- 2 small zucchini
- 1 can black beans 
- 1 cup refried beans with chiles
- 1/2 cup diced white onion
- 1 teaspoon chili powder
- 1 tablespoon cumin
- 1 tablespoon hot sauce
- salt and pepper
- 2 containers red enchilada sauce (I love the Frontera brand)
- 1/2 cup cour cream
- 2 packages shredded quesadilla cheese
- small flour shells
- salsa, jalapeno, avocado, and sour cream for topping


Slice the squash and zucchini in half and then slice those halves again and dice up the pieces.  Toss with olive oil and salt and pepper.  Place on a baking sheet and roast at 350 degrees for about 25 minutes.  The set aside. 

In a bowl combine the black beans (drained and rinsed), 1 cup refried beans with green chiles, 1/2 cup diced onion,  1 teaspoon chili powder, 1 tablespoon cumin,  and 1 tablespoon hot sauce.   Add in the roasted zucchini and squash and one package of the quesadilla cheese and mix all together.  

In a baking dish pour one container of the enchilada sauce on the bottom.  I reserved just a little of the enchilada sauce and added it to the squash/bean mixture.  Take a flour shell and fill it with the squash and bean mixture.  Roll ii up and place it in baking dish.  Repeat until the squash mixture is gone.  It should make about 8 enchiladas.  

Take the remaining package of enchilada sauce and mix it with 1/2 cup sour cream.  Then pour this over the top of the enchiladas.  Cover with the remaining bag of shredded cheese.  
Bake at 350 degrees 30-40 minutes until bubbly. 

Serve with salsa, sour cream, avocado, and jalapenos.

Yesterday's OOTD.
I ordered this tee shirt on a whim with my other sale items because well it was $15.  I was pleasantly surprised, I love the loose fit, longer sleeves and it so soft.  I had a stiff itchy tee shirt.  This one is so incredibly soft.  It comes in 6 other colors too.  I am wearing a size small for reference.  
My hat is also on sale for only $19.  I have just recently become a hat person.  I love them especially on bad hair days!  The hat also comes in gray and black.

Thoughts For Thursday

Happy Thursday Friends.  This week is flying by, which is a good thing!  Means we are closer to my Birthday week where anything goes!  I plan on celebrating all week (much to Matt's dismay)

My Splendid Dress came and I am obsessed with it.  It is so flattering + comfortable.  I see myself living in it this Summer.  I highly recommend it and it was a good price as far as dresses go.



I picked up the most beautiful Orchid Stems yesterday.  If you are local you must stop by Lotus.   They have the best orchids.  I got all these for the price of flowers at Harris Teeter.  A real steal.


I made my moms Veggie Pizza for dinner last night.  We used to eat this all the time growing up and I still love it.  It is a sneaky way to get your kids to eat veggies- although disclaimer Sterling made me remove all the carrots before he would touch it but he did eat the broccoli and cauliflower.  It's base is crescent rolls- enough said right?  You will love this pizza.


Our Marshalls and TJMaxx here have been getting in the best stuff lately.  My mom took me early birthday shopping and I scored this awesome Equipment Dress. I also spied these Rebecca Minkoff Purses but neither came home with me.  Somebody please buy them!


Sterling really wanted me to get the purse.


As I mentioned before my parents were here for a few days this week and it was lovely.  My sweet dad spackled all the rough spots and holes in our kitchen and bathroom.  He even trained Sterling how to do it, added bonus!


We took a late afternoon boat ride that was awesome.  Makes me ready for summer and warm weather.



I have had a hard time getting into any books lately until I picked up Safe Haven.  So far I am loving it, it is an easy,  entertaining read.  Next up - any recs?


 I am completely obsessed with The Lot a local restaurant here.  I ate there Monday and I am headed back Saturday.  How gorgeous is this plate of veggies?   It was all locally farmed veggies with jalapeno aioli- so good!   Locals you must check this place it out it is such a hidden gem on James Island.

Obsessions

It's Tuesday and my sweet baby is still sick. A viral infection they say, so here's to hoping he is a better tomorrow, because Mama hates seeing her little man sick. Since I have had little to no time for myself or to visit your blogs because I have been tending to my little one, this list will be short and sweet.

BEACH HOUSE WINE
I met the wine rep for this wine at Harris Teeter last week. Of course he talked me into buying one of the wines he sales, but he was right, this wine is great. I was very impressed, it is a blend of sauvignon blanc and semillion. It is light, not sweet and crisp. It is my new favorite wine. You should totally buy some.




SUPER NATURAL EVERYDAY COOKBOOK

I am sure alot of you are familiar with Heidi Swanson, the author of the fantastic blog 101 Cookbooks. I recently got her cookbook and it is great. I have just been reading it (I know I am a nerd that reads cookbooks before I use them)and have not actually made any recipes but they all look amazing and so healthy. Heidi gives great tips for cooking with grains, substituting flours etc to make your meals healthier. A few things I can't wait to make Kale Salad, Quinoa Patties, and Cauliflower Soup. I will warn you she is a vegetarian so there are no meat recipes in this book, but there are tons of other delicious options.





GREEN JUICE
Saturday before the farmers market my friend Alissa made us some green juice. A blend of kale, spinach, cucumbers, apples, parsley, ginger, and lemons and now I am hooked. The juice was so tasty and maybe it was in my head but I swear I had more energy that day. I know my girl Gwennie loves her green juice which makes me love it even more. Now I just need a juicer to make my own!





MISSONI BALLET FLATS + CROCHET KNIT SHIRT
I admit it I am kind of ready for fall already. I mean who isn't with these sweltering temps. I am a huge Missoni fan and these are two pieces I would like for my fall wardrobe. I think the flats would look fab with skinny jeans and a loose white blouse or fitted black shirt. I think the shirt would go with everything from shorts to wide leg jeans! I heart Missoni patterns and colors. These are two pieces I am sure I would wear often!

Scenes From Our Weekend

Happy Monday!  I hope everyone had a great weekend.  We were up bright and early to get Sterling off to his first day of first grade.  He is excited so that makes me feel so much better.  Last year when he started kindergarten I was so nervous and apprehensive but this year I don't feel that way as much.  I am sad Summer is over I truly wish we could have had like 2 more weeks.  But not my choice so back to the grind we go.  I took this picture this morning before we dropped him off- he seems so grown up.  

Friday morning we stopped in to meet his teacher and see his classroom.  Frances kept asking if this was her desk too.  
After that Sterling had his last day of tennis camp and Frances and I headed to Huriyali.  I had heard so many great things about it and was excited to try it out.  I got a green juice that had kale, cucumber, green algae, and spirulina and avocado toast.  Loved them both, I will be back again.

Frances is in a phase where she likes to take a book everywhere.  Usually it has to be a paperback book not a kid's book and it makes me laugh:)  She pretends to flip through and read it.
Her dress and blouse in this same stripe are on sale.  I love the rainbow stripes so much!


Friday night we went to our friend's pool and swam and ordered pizza.  The kids had a blast.

Saturday I hit up the gym and then ran a few errands.  A friend sent us this picture from last weekend and I love it.  A definite framer.
My bathing suit is still on sale- I am in a size medium.

Saturday night Sterling had a friend sleepover.  Matt and I cooked a delicious veggie dinner and watched Bloodline.  We made Cauliflower steaks and they were so good.  I used this recipe and used capers instead of pine nuts because I didn't have any. 

Anyone else love these mini Sofia cans?  I always buy them at Target they are great because sometimes I just want a glass of champagne and hate to waste a bottle after opening it.  My embroidered blouse is now 60% off!  Size down it runs on the large side.  I am wearing XS.

Sunday morning the kids were up super early so we headed to the Variety Store for breakfast.  You can't beat the views.

I love their Greek Omelet and of course I always need a side of bacon.

Sunday's Best.  I picked up this dress during the Loft sale and really love the fit.  It is great for church or work.  The material is thicker and I like the black/tan stripe combo.

That night Matt picked up some fresh fish for dinner and I made this chopped Thai Salad.  It is hands down one of my favorite salads.  It is so light and refreshing!  Perfect for Summer- you can see the recipe HERE.

As a treat I sometimes let Sterling sleep with me.  I remember growing up when my Dad was out of town and my mom would let us take turns sleeping with her and I always loved it.   So since last night was the night before school started and he was a little nervous I let him sleep with me:) I snapped this right before we went to sleep.  Love my sweet baby boy so much.

Scenes From Our Weekend

Happy President's Day!  Since school is out today I am having a birthday party for Sterling and a few friends because he turns 6 tomorrow.  I honestly can't believe he will be 6!  Time flies. 

Thursday night we had a girl's night at Bin 152.  It is hands down one of my favorite wine bars in town.  I had not been in almost year, so I was thrilled to go back.  They have a such a great wine selection and their charcuterie boards are the best I have ever had.

I enjoyed lunch at CO, a spot I often forget about,  their food is always on point.  We started with edamame spring rolls and beef kimchi dumplings.

Friday night Matt and I tried a new restaurant with a few friends called The Watch.

It is located on the rooftop of a new boutique hotel on Wentworth Street called The Restoration.  I definitely want to find an excuse to spend a night at The Restoration.  I loved the atmosphere and decor.   


The menu had lots of great options.
I enjoyed the Roasted Vegetable Salad and Cauliflower Soup and Matt had the lobster roll, served with the most delicious homemade chips.

I wore my first Lily Pulitzer purchase for me, The Elsa Blouse.  My girlfriends talked into buying one and I have to say I love the fit and the bright pink.  Sometimes the Lily patterns can be too much for me but I loved this solid version. The pink is the perfect shade of hot pink.  Sizing wise I recommend sizing down, I am in an XS.
Saturday we had a low key afternoon and then headed to our neighbors for Happy Hour and pizza.
I made my Greek Salad Bites again, always a favorite and easy appetizer to whip together.  
How cute are the Koi Fish appetizer plates??  They come in 4 different colors. 

Sunday Matt brought us all Bojangles for our Valentine's Breakfast.  Gotta love The Bo.

Then we headed to The Southeastern Wildlife Festival.  We had never been before.  I feel like every year one of us is usually sick this weekend so we were excited to check it out.
Sterling rode a camel and loved it!

The kids also loved the petting zoo.


Thanks to our friend Thomas we managed to get a family picture where everyone was looking at the camera and smiling:)
My Missoni Scarf is on sale in a pink version.  It is also on sale in a non infinity version too.  My mom gave me this scarf 3 years for Christmas and it is still my favorite scarf ever.

After we put the kids to bed Matt and I celebrated Valentine's Day with some champagne, our favorite vodka penne, and tiramisu.
