The Easiest Bean and Cheese Enchiladas + New Favorite Tee and Tassel Earrings

If you love Mexican food and are looking for an easy weeknight dinner you must try these enchiladas.  I kid you not they take maybe 10 minutes to make and are so tasty.  I have made them twice in the last two weeks.  Little confession I love the bean burritos at Taco Bell, I used to eat them all the time.  Now I rarely eat them but man I dream about them.  These enchiladas are kind of my attempt to recreate the burritos with a twist!  I really recommend making these with the refried beans with either the jalapenos or green chiles, it just gives the burritos more flavor.  When we made these we served Mexican Street Corn as a side and it was a great meat free meal.   You can easily make these ahead of time and keep in the fridge til you are ready to bake them!
Enjoy!

||  E A S Y   B E A N  + C H E E S E   E N C H I L A D A S ||

- 1 can refried beans with jalapenos or green chiles
- 1/2 white onion diced finely
- 1.5 cups cheddar cheese
- 1 cup Monterey Jack Cheese
- 1 tablespoon cumin
- 1 teaspoon chili powder
- 1/4 teaspoon paprika
- flour shells
- 2 packages red enchilada sauce ( I love the Fronterra brand, they come in a bag as opposed to a can)
- 1/2 cup sour cream
- 1 teaspoon cumin
- fresh cilantro,  avocado, salsa, and sour cream for serving

Take one package of the enchilada sauce and pour in the bottom of a rectangle baking dish if you use the enchilada sauce in a can this would probably equate to about 1 cup of sauce.

In a bowl mix together the refried beans with the diced onion, cheddar cheese, 1 tablespoon cumin, 1 teaspoon chili powder, and 1/2 teaspoon paprika.  Take a flour shell and fill with the bean filling and roll up and place it seam side down in the dish.  You should have enough filling to make 7-8 enchiladas.

In a bowl mix together the remaining packet of enchilada sauce with the sour cream, 1 teaspoon cumin and 1/2 teaspoon chili powder.  Pour this over the rolled enchiladas.  Then top with Monterey  jack cheese.  Bake at 350 degrees about 35- 40 minutes until cheese is bubbly.   Top with cilantro, avocado, salsa and/or sour cream before serving if desired.

I am currently having quite the obsession with tassel earrings.
They are such an inexpensive way to make a fun statement.   Most of mine are solid colored so I liked these were colorblocked.

The tee below is the one I mentioned on my obsessions post last week.  I ordered it and like it so much I am ordering a second color.  It runs TTS, I however ordered a medium because I like my tees on the looser side.  I am thinking of ordering the white next, I always can use a good white tee.
Both the tee and earrings are only $36.

a closer look at the earrings
Another pair that I have received many questions about since my Dallas trip are now online!  I am wearing them in the picture below.
They come in 7 different colors.  I am wearing the blush color.  The great thing about these earrings is they are super lightweight.  I seriously love all the colors.

Kid's Swimwear Favorites

It is no secret around here that Frances Moon loves a bathing suit.  She wants to wear one everyday.
Case and point she insisted on sleeping in one last night over her pjs.  I find it pretty adorable though, I know I will miss this stage one day.

In honor of Frances Moon and her love for bathing suits I thought I would dedicate an entire post to kid's swimwear.  There are so many cute ones for Summer,  I wanted to round up a few that we are loving for the boys and girls plus a few other Summer favorites.

It doesn't get much cuter.
Sterling's swim trunks and Frances Moon's bathing suit also come in 2 different patterns than what they are wearing.

For the girl's popsicle suit, definitely order up a size, it runs small.  Frances is wearing the 3t but she honestly might could have worn the 4t.
I love the open back with the tie and bright neon colors!

It is hard to tell in the pic but they are wearing the new Native Shoes called The Venice.  These are a bit different from the regular natives.  They are made out of a thiner light weight material almost like neoprene.  The kids love them.  They are so easy to get on and clean as well.  Sterling has them in the blue color and green, and of course Frances wanted pink.

We also really like this zip-up cover for Frances Moon.   It is the perfect shade of hot pink.  It is nice that it zips up and she can put it on herself.  Plus it is made of terry cloth so it acts as a towel too drying her off.

If you need a cooler for the pool/beach I can't say enough great things about this one.  It is the perfect size, to hold snacks and drinks (or Matt's beers:)

Oh and the Supergoop Sunscreen pictured below is the best!!  It is formulated with 35% less alcohol than other brands, is water resistant, and contains vitamin C.  It is super easy to apply on the kids and lasts a long time.

Ready for a swim!  I mentioned my swim suit yesterday but for all you Mom's looking for a great one piece I really like this one.  I do suggest ordering up a size as it runs on the small side.  As far as strapless suits go, it actually stays put pretty well but it comes with a strap so you can wear it as a halter as well.

A few more adorable pool/beach looks for the kids!

Sterling has the goggles and sunglasses and they both are great.  The sunglasses fit perfectly on his head and the goggles work really well.

Scenes From Our Weekend

Happy Monday everyone! I can't believe there are only 2 weeks of school left before Summer.  This year has flown by.  I can't believe I will have a first grader next year, sniff sniff.

Thursday night I hosted supper club at my house.  We have a group of about 6 of us and we rotate houses every month and host supper club.  It is always a fun night and I get so excited about busting out my pretty table linens and dishes.  The girls always appreciate the things the men don't!
Glasses are vintage
I wore this Anthropolgie dress I picked up last weekend.  It also comes in grey and green.  I am wearing a size small.  It is lightweight and so soft.
Always so much fun with my girls.

Friday my mom was in town so we surprised Sterling for lunch at his school and ran a few errands.
That night we enjoyed some the leftovers from Supper Club as an app + Greyhounds. That cauliflower below is the Trader Joe's pickled kind I mentioned on Thursday, it is so good!

Saturday morning we hit up Glazed for Doughnuts and then the Farmers Market.
They had the coolest new booth at the food corner, it was homemade cotton candy.  The kids loved it.  The flavor combinations were really cool.  Sterling choose root beer.

That afternoon we hit up the pool.   You may remember this suit from my obsession post last week, well I ordered it and LOVE it! I am a sucker for a flattering black one piece.  Always a classic look!  I am wearing a size 6, runs slightly on the small side.

We had happy hour with my parents that night and then gilled fish with the kids.  We had some fresh mahi that was incredible.
Wearing my white off shoulder blouse again.  Several of you asked about sizing from my post Thursday.  I am wearing the size O/S.

Sunday was church.
Frances Moon's Dress is Shrimp and Grits Kids
Followed by brunch with a view:)
Sunday afternoon we cleaned house and put a new swing up for the kids, then we went to the yacht club to let them play.   They love watching the boats come in.  and yes, Frances is just wearing underwear (Paw Patrol of course) she is not potty trained but it is her new obsession to wear undies over her diapers.   Thinking potty training is not too far off.

Sterling found a horseshoe crab and was so excited!  He promptly put him back in the water, but it was cool to see it up close.  A woman at the yacht club told us they use their blood for certain types of cancer treatment which I found fascinating.

Sunday Dinner was Black Bean Cakes with Avocado Crema and Corn Relish + Squash Gratin, two old recipes from my blog but both are fantastic!

Have a great week!

Favorite White Jeans + A Few Beauty and Food Products to Try

I posted this picture on instagarm last night but apparently after some software updates on Instagram and Liketoknow.it the actual links did not show up for some people, so I wanted to share on here.

These jeans are by my new favorite jeans company McGuire Jeans.  I have two pairs of their blue jeans that I love, so I recently ordered these white ones and they rock!   As far as white jeans go these are awesome they have plenty of stretch, run TTS, are super comfy and not see thru.   The end of the jeans is slightly frayed which I like.  I have washed them and they still fit perfectly.

The jeans also come in a short version that I am tempted to try out.

The blouse I am wearing is from a line called Hatch.   I recently went to a trunk show here featuring their line and fell in love with it.  It is created for women to wear before, during and after pregnancy.  Don't get any ideas I am certainly not pregnant but I do like loose fitting tops.  The fit is amazing and the blouse comes in blush and black as well.  Anyone of you pregnant mamas you should check out the line.  I hated spending money on ugly maternity clothes.  This line is awesome because it is not maternity so it still looks super cute post baby as well.  Pure genius if you ask me.  It honestly kind of made me want to be pregnant again the clothes are so cute.  You can shop the whole collection here
I am wearing the white, but you can see the other two colors below:)

I have been hitting up Trader Joe's quite frequently lately.  I love that place, each time I go I find new things I love.  Currently I am obsessed with the pickled cauliflower.  It is crazy good.  I could eat that entire jar in one sitting.  I just went yesterday and bought 4 jars!
Matt and I also love the truffled mushroom ravioli.  If you like a truffle flavor this is amazing.  We serve it with Rao's marinera and fresh parmesan and it makes a wonderful meal.
Also excellent is the Hatch Green Chili Mac and Cheese.  When we get tired of our beloved Stoffers we eat this:)
I love a sweet nibble after a meal and these are perfect for that.  They are super thin and super tasty.  just beware it is easy to eat the whole container they are so thin!

When I went to Dallas last month for our blog conference I met with a beauty company called Colleen Rothschild.   I like to try products out for a bit before I mention them on my blog.   I have been using the clarifying detox mask now for a little over a month and really love it.    It is made with activated charcoal and French Clay.  It really helps even out skin tone and your pores.  When you put it on it tingles a bit and then feels really tight.  After I rinse it off my skin feels so amazing.  I use this 1-2 times a week.  It is currently on sale for $36, which compared to many other masks I have used is a great price point and it lasts forever.  I have hardly put a dent in mine.
I like to use this cream after my mask.  I have super dry skin and this feels so good.  It is super moisturizing and when you wake up in the morning your skin feels so smooth and refreshed.

I recently went to a Trish McEvoy make-up event and purchased a few products.
I am loving the lipstick and eyeliner I bought.  I bought the lipstick in the color Flirt.  It is a great color for everyday or night.  It is such a flattering shade of pink not too light or dark.  Right now at Nordstrom they are offering a gift with purchase too if you spend $75.
I bought the gel eyeliner in the navy color.  The rep showed me how to do a smokey eye with it for a nighttime look and a thiner line for the day.  It is super easy to apply and goes on smoothly.  I really like the navy for something different, it makes your eyes pop.

Chopped and Spiralized Thai Salad with Crispy Shallots

There is a restaurant here in Charleston called Leon's Oyster Shop and I dream about their Siam Salad.  It is so light and refreshing,  it is quite possibly the perfect salad.  I don't ever branch out and try anything new there because I am scared I won't love it as much as the salad- although side note their avocado toast, Brussels sprouts and fried fish sandwich are also da bomb.

This salad is a little different. but my spin on their salad.   The Siam has peanuts and avocado which would be great added in here but wouldn't you know it my avocados were rotten when I opened them and we had no nuts.  Add them if you wish.  I added the spiralized zucchini and carrots because I love spiralizing things and had a few on hand from our Farmer's Market trip.    I like the combo of the spiraled veggies and shredded cabbage.    The fresh herbs and crispy shallots make this salad amazing and take it to the next level.   I want to put crispy shallots on everything.

A few of you have asked which spiralizer I use.  The one pictured below is what I have.  I bought it about 2 years ago and still use it often.   I like that it has 3 different blade options.  It is also easy to clean you can place the whole thing in the dishwasher.  I also used this mandolin to shred the cabbage.    Both are great gadgets to add to your kitchen.

|| C H O P P E D   T H A I   S A L A D  + C R I S PY  S H A L L O T S ||

- 1 large zucchini spiralized
- 2 carrots spiralized
- 1 head Napa Cabbage shredded
- 2 baby cucumber halved and sliced thinly
- 1/4 cup mint chopped
- 1/4 cup basil chopped
-1/4 cilantro chopped
- 2 oranges peeled and segmented
- 3 shallots
- peanut oil

DRESSING
- 1/4 fish sauce
- 1/2 cup lime juice (juice of 4 limes)
- 1 teaspoon red pepper flakes
- 1/2 teaspoon minced fresh ginger
- 2 cloves of garlic minced
-2 tablespoons maple syrup

Use a mandolin and shred the cabbage and place in a large bowl.  Add zucchini, carrots, cucumber, basil, mint, and cilantro in the same bowl.

Meanwhile heat 1 cup peanut oil on a skillet on medium heat.  Thinly slice the shallots and drop in the oil once it starts to get hot.  Cook until they start to brown about 5 minutes.  Be careful because you don't want them to burn.  I stirred mine around so they all cooked evenly.  Once they look light brown remove them with a fork or slotted spoon and lay on a paper towel and sprinkle with salt.

For the dressing whisk all ingredients together.

Toss all vegetable ingredients together and mix with dressing.  Top with oranges and shallots right before serving.

Enjoy!
