Weekend Style || My Favorite Tee Shirt

 I love nothing more than finding a great tee shirt and this is my new favorite tee.  When I find one I like I want to buy it several colors.  I just ordered the orange I loved my blue one so much.
This tee shirt is so soft and the relaxed fit is just perfect.  It runs on the large side so order down a size, I am wearing the size XS in the dark emerald color.

For The Men Gift Guide Part 2 | Watches

I am back with part two of the Father's Day Gift guide.  I always think watches are great gifts.  They are timeless, classic and useful.  I rounded up a few that I think the men in your lives would love, thanks to Nordstrom's awesome selection.
 I decided to break them up into categories by brand.   They vary in prices depending on how much you want to spend.


My Dad has a Burberry watch that is one of my favorites.  They are not cheap but worth the investment.  Such a classic watch.

Skagen is a great more affordable watch option.  These watches are designed in Denmark and I love the simple modern look.  Their designs are inspired by the ocean and landscape in Denmark which I think is really cool.  My Dad actually owns one of these too- can you tell he loves watches:)  All of these watches are under $200 and the quality is awesome.

These watches are bit more rugged.  They are made in Detroit with all American leather. These watches are also a higher price point similar to Burberry.

I love the sleek sophisticated look of these watches.  If your man likes to see actual numbers on his watch these may be a no go but they sure are pretty.  Really dig the digital one.  The camo one would be a great gift if your man is into hunting.

Salsa Verde Chicken Enchilada Casserole + Ruffle Dress


My love affair with Mexican Food continues.  I seriously could eat it every single day and be a happy lady.  Instead of grilling out Memorial Day I decided I needed Mexican.  Not tacos because we do that every week but something different.  I googled several recipes and none where exactly what I wanted so I complied this tasty number.   It is super easy, takes like 15 minutes to whip together and it is really good.  Matt claimed this was the best Mexican casserole I have made- success.  If you can make your own salsa verde, it is so much fresher.  But if you want to use store bought I recommend the Mrs. Renfros brand.  I actually used a jar of it and a jar of our homemade salsa verde together.  I always use a rotisserie chicken, it saves so much time.  The three different cheeses provide some killer flavor, but feel free to switch it up with any cheeses. You also could sub ground beef or ground turkey if you don't like chicken.  This can be made ahead and it saves well, the leftovers were great the next day.

|| S A L S A   V E R D E  C H I C K E N  E N C H I L A D A   C A S S E R O L E ||

- 1 Rotisserie chicken shredded
- 3 tablespoons taco seasoning
- 1 can pinto beans drained and rinsed
- 2 jars salsa verde - I like this RECIPE
- white corn shells- you will need about 15-20 shells depending on dish size
- shredded Monterrey jack cheese
- shredded manchego cheese
- shredded cojita cheese
- 2 jalapenos
- avocado
- white onion and cilantro for garnish


Start with a layer of salsa verde in the bottom of a baking dish.  Then layer corn shells (I used about 5-6 corn shells per layer), 1/2 shredded chicken, 1/2 pinto beans, shredded cheese.  Layer again and then end with a final layer of corn shells, salsa verde and cheese.  Top cheese with sliced jalapenos if desired.  Bake at 350 degrees about 35-40 minutes until cheese is bubbly.  Garnish with sliced avocado, diced white onion, and fresh cilantro.

Wanted to mention this dress I posted on instagram last night.  It arrived in the mail this week and I am loving it. Runs TTS, I am in the size 4.  I wanted to share it because there are only a few sizes left if you want to order.  It is lightweight and you can wear it off your shoulders or up. I have really been loving the Topshop line lately, it is affordable (this dress is under $70) and they have such cute Summer items right now.

Scenes From Our Memorial Day Weekend

Happy Tuesday y'all, although it kind of still feels like Monday to me.  Four day weekends always throw me off.  This is our first real week home with no school.  We are ready to enjoy our Summer, although I do kind of like a schedule:)

I hope you all had a fabulous Memorial Day Weekend. I am always forever grateful to those men and women who so fearlessly serve and protect our country. 
 Matt had a few of his best friends come stay for the weekend, they do this every year.  So I packed up and headed to my parents condo down here for a mini staycation with my parents and sister and brother in law.  We had a blast and it is always nice to have extra help with the kids.

Friday morning we took the kids to Wonderworks to play.  We just love that toy store, they have the coolest toys and gifts.

Matt came over for happy hour Friday night before his friends arrived and we managed to get a pretty good family picture.

Of course on the first day a horse fly bit my foot and I had a major allergic reaction.  My foot was so swollen and painful the entire weekend.

We spent much of the weekend at the pool.  

Barbara Cobb was sweet enough to send me and Frances beach hats and we adore them!!  You create your own by picking your inner and outer fabrics and monogram. You can see all the fabric choices and create your own here.  She also makes matching beach totes:)  I decided to make our hats coordinate with the same inner black and white fabric.

We enjoyed a fabulous dinner out at Big Belly.  I am totally obsessed with their tempura flounder tacos. Try them next time you go!

Sunday we attempted to take our boat out but it was pretty rough so we just sent the men and enjoyed a few cocktails at the Yacht Club after plus a killer sunset.


Monday was super low key but ended with a fabulous cocktail my Dad created.  This cucumber martini is so refreshing!!

Followed by a kick ass Salsa Verde Enchilada Casserole.  I will share the recipe tomorrow!
