Scenes From Our Weekend

Happy Monday. 

Friday was my birthday and I have to say it was a wonderful day.  I am so thankful for my parents and girlfriends for making my day so special.  The last year has been a rough one and their love and support has been amazing.  I am one lucky gal. 

Birthday flowers from a dear friend and the kids gave me this new Nest candle that smells amazing- the scent is White Camellia.

We ate dinner at The Grocery one of my favorite spots in Charleston.

Fried Oysters + Lamb Meatballs.  Both were so good. We ordered 4 rounds of the oysters we loved them so much.  
They were sweet enough to send me some Churros for dessert candle and all.
 The most insanely delicious dessert.  The dipping sauces are so good.

We ended the night at Halls with more birthday cake.  
Saturday I felt horrible.  The older I get the more I realize I can't hang and party like I used to.  I spent most of the day watching Netflix and then we had dinner with my parents. 
I found this embroidered blouse and love it.  I am wearing a small.

Thoughts For Friday

Happy Friday!  
Today is my birthday and I am looking forward to a fun dinner out with my parents and best gals.  
I ordered this dress to wear and hoping the weather stays warm so I can wear it tonight.  If not I will definitely save it for another occasion because I love it.

Sterling talked me into letting him get a trendy haircut yesterday and I am loving it on him.

I enjoyed this wine with my parents last night. It is a fabulous Sauvignon Blanc from Orin Swift Cellars. I highly recommend it, I am super picky about Sauvignon Blancs because they can be too sweet and this one is perfect. 

I had lunch at Five Loaves this week, hands down one of my favorite lunch spots.  The ham and brie sandwich is amazing.  I also love the mushroom quinoa salad. Actually thinking I should recreate that salad for the blog i love it so much.

My friend Melissa was in town from Charlotte, so we enjoyed hanging with her and her two boys.

I am obsessed with these new workout pants and they are high waisted too!  They run TTS, I am wearing a small.

After several recommendations I picked this book up and started reading it last night.  So far I am liking it.  It talks about focusing on the important things in life and not wasting your time worrying  about the little things.

What I Wore | Plaid Off Shoulder Blouse

Lately I have been loving plaid.  Sometimes I feel like plaid can be more geared towards Fall but I have seen some great Spring options lately.  This blouse is perfect for Spring.  I paired it with back jeans but it is also super cute with jean shorts. 


 Excuse the massive amount of wind in these pictures.  It was super windy the day we shot these pictures. 
I love the shoulder tie detail.  The blouse runs TTS, I am wearing a size small.
I know I show these earrings often but they are seriously the best!   Super light weight and they go with so many outfits.
Arm candy on repeat (and please ignore my nails, the gel nail struggle is real.  I want to peel them all off every time ).


I tried on this plaid dress yesterday and love it.  Would make such a cute Easter dress and is currently on sale and under $70.  Runs TTS, I am wearing a size 4.

Prosciutto + Artichoke Stuffed Shells | OOTD Stripe Tee and Loft Sale


I have not made stuffed shells in years.  In all honesty I don't cook much pasta.  I can't control myself when eating pasta so it's better for me not to eat it:)  This week I had a craving for some stuffed shells so I set out to make them.  I originally was going to do chicken and artichoke stuffed shells but decided prosciutto would be way better and have more flavor than chicken.  This would also be great with Italian sausage.  The shells turned out awesome and the kids both actually ate them- winning mom moment since most of the time they won't touch what I cook.  
These can be made ahead and just baked at dinner time.

|| P R O S C I U T T O  +  A R T I C H O K E  S T U F F E D  S H E L L S ||

- 1 box large pasta shells
- 1 small container ricotta cheese
- 1 shallot, finely diced
- 1 garlic clove minced
- 1 cup chopped prosciutto (I used the pre-chopped) 
- 1 can quartered artichoke hearts, drained and chopped finely
- 1/2 cup parmesan cheese
- 1.5 cups mozzarella
- 2 tablespoons chopped basil
- 1 jar marinara sauce

Cook shells according to box.  Drain and let cool.  

Heat 1-2 tablespoons olive oil in a medium skillet.  Add in shallot, garlic, and prosciutto.  Cook about 5-10 minutes until shallot is wilted and prosciutto is slightly crispy.  Add in artichokes at the end and cook about 1-2 minutes. 

In a large bowl combine ricotta cheese, 1/2 cup parmesan, 1 tablespoon basil, 1/2 cup mozzarella, prosciutto mixture and salt and pepper.  Mix well.  

In a baking dish cover the bottom with 1/2 the jar of marinara.   Stuff each the cooled shells with the ricotta mixture and place in the baking dish.   Scoop the rest of the mariner over the top of each shell.  Sprinkle with remaining mozzarella- and add more cheese if desired.  Sprinkle with 1 tablespoon chopped basil.  

Bake at 350 degrees about 20-25 minutes until bubbly and cheese is melted. 

optional- bake 3-4 slices prosciutto at 350 degrees until crispy.  Crumble and place on top before serving.
