If you love caesar salads you will love this salad. It makes a great meal and saves easily too since the kale won't wilt as quickly as other lettuces. I came across this recipe in my new Skinny Taste cookbook and then decided to add quinoa and prosciutto to bulk up the salad a bit. I loved the addition of both. The dressing is so good. Don't get scared by the anchovies they really give it great depth and flavor. This ended up being a really filling salad because of the protein and grains.
Also I know many of you wonder if I feed my kids the same thing we eat. The short answer is yes. In this case my kids don't like salad or lettuce- go figure. So I just served them some of the chicken with a little sliced Parmesan cheese, sliced eggs and a veggie (carrots). That way I didn't have to cook them an entirely separate meal.

- adapted via Skinny Taste
- 1 bunch laciando kale. chopped finely
- 1 rotisserie chicken chopped into bite size pieces
- 1 cup chopped cherry tomatoes cut in half
- 1 cup cooked quinoa
- 2 hard boiled eggs, chopped
- 4- 5 pieces prosciutto
- shredded Parmesan cheese
D R E S S I N G
- 1/2 grated Parmesan cheese
- 4 anchovy filets
- 1 garlic clove minced
- 3 tablespoons olive oil
- 1 tablespoon water
- juice of 1/2 a lemon
- 1 tablespoon red wine vinegar
- 1 tablespoon dijon mustard
- fresh black pepper
Place all dressing ingredients in a blender or food processor and bend until smooth. Add another tablespoon of water if dressing is too thick.
Heat oven to 350 degrees. Lay prosciutto on a baking sheet and bake about 10 minutes until crispy.
Arrange all salad ingredients in a bowl. I like to keep my ingredients separate because I feel like it makes the leftovers less soggy. Scoop a little of each ingredient in a bowl, top with crumbled prosciutto and drizzle with dressing.

I love your blog and all of your delicious recipes!!! This salad looks amazing...I am trying to cut dairy out of my diet and was wondering if I was to eliminate the parmesan cheese would the dressing work or if its something I could use to replace the cheese???

THis looks so delicious! I do the same thing with my kids re: not making a separate meal-- I usually just add a carb to what the adults are eating!
