Thoughts For Friday


Happy Friday Friends.  I am officially exhausted this has been a crazy busy week for us!!  But tonight I am excited because I am finally getting to meet two blogger friends in person- Sara and Mandy.

Yesterday I finally popped on the home decor store, Eclectic in Mount Pleasant.  Sidney has such a great eye for design and had some awesome pieces.  She is featuring WayWay Allen's artwork this month and it is all gorgeous.  I wanted several pieces!


 and how cute would these animals be in a nursery?  So much like Jonathan Adler but cheap!  If I didn't have so much stuff in Frances Moon's nursery I would have bought one!

Thank you to everyone on instagram for all the great mascara recommendations. For years I have used Maybelline Great Lash and all of a sudden I hate it! I am looking for a new one.  I am testing out many of the suggestions and first up was the Loreal Voluminous.  I am going to wear it for a week or so to get a good feel for it but so far it is better than my old one!  Next on my list are : Josie Maran, Benefit, and Chanel.


Local friends if you have not eaten at the Square Onion in ION you must.  The Whitney veggie sandwich is my favorite!!  It is hummus and veggies on delish bread!


I am obsessed with watching my kids sleep, totally normal and not creepy, right??  Anyways I snapped this picture of Frances and it melted my heart,  a framer for sure!


I watched the most interesting segment on ABC News about Dan Harris, who had major anxiety and a panic attack on air which lead him to research happiness and resulted in all signs pointing to meditation.  It was so interesting that sitting and meditating only 5 mins a day can improve areas of your brain and help with so many other ailments.  I am convinced I need to clear my mind and meditate and I started reading his book, 10% Happier.  It really is so interesting.


I am dying to try out these amazing Napa Cabbage Wraps from Camille Styles next week.  They look so good!

These Vince Genna Sandals have me drooling, totally lust worthy.  Quite possibly the most perfect nude sandal I have ever seen! 


For a cheaper version check out these by Joe's Jeans (who knew they made shoes).  Sizes are selling out fast because these are such a good deal and gorgeous too!

Lastly, I just love this picture of me and kids at bath time.  I count my blessing everyday for this sweet family of mine.  I love how much Frances already loves her big brother.  Sterling is so good with her always making her smile.

Sterling's Big Boy Room + Lulu and Georgia $100 Giveaway

As most of you know we are currently trying to spruce up our bedroom.  But you see I can't ever just focus on one project and complete it I have to be working on several at the same time. I am crazy like that!   Enter Sterling's room.  His room and our master were the main rooms I wanted to tackle this year.   It all started when I saw this rug on Lulu and Georgia.  It was the starting point for his room.
I thought it was the perfect rug for a little boys room.  It is an indoor/outdoor rug which I love because they are easier to clean and trust me my little man makes quite a mess!

I did Sterling's room two years ago and just want a refresher.    We are not buying new furniture for his room, nothing drastic, just some small changes.  My thoughts are a new rug, new light fixture, artwork, and possibly a fresh coat of paint on the walls,  We are doing all this on a pretty cheap budget so I will be looking for accessories at TJmaxx and Homegoods to save money.

This is his room currently.  This pic was taken awhile back - the rug is now covered in stains so we are going to move it to our garage which is where our laundry machine is so it will be nice to have a rug out there.   I am also thinking a lighter paint color on the walls might be nice and make the room feel larger, leaning towards a Farrow and Ball Gray if we paint.  Loved the brown for four years but kind of ready for a change.  It all will depend how the brown walls look with the rug
I still like his crisp white bedding, I am a sucker for a white bed!

Amazing Beef Enchiladas


It has been awhile since I shared a Mexican recipe.  Mexican food is my happy place, absolutely love it.  These beef enchiladas are crazy good.   Easy to whip together and then just pop in the oven.  I served ours with slow cooked black beans and it was the perfect meal!  Cheesy beefy goodness for when you need that Mexican fix!

|| B E E F  E N C H I L A D A S ||

Ingredients
  • 2 1/2 cups enchilada sauce, divided
  • 1 tablespoon olive oil
  • 8 ounces ground beef 
  • homemade taco seasoning
  • 1 (4.5-ounce) can diced green chiles
  • Kosher salt and freshly ground black pepper, to taste
  • 1/2 cup canned corn kernels, drained
  • 1/2 cup canned black beans, drained and rinsed
  • 1 1/4 cups Monterey Jack cheese, divided
  • 1 1/4 cups shredded cheddar cheese, divided
  • 12 (6-inch) flour tortillas, warmed
  • sliced green onions
  • 1 avocado, halved, seeded, peeled and diced
Instructions
  • Preheat oven to 375 degrees F. Pour 1 cup enchilada sauce in the bottom of a 9×13 baking dish; set aside.
  • Heat olive oil in a saucepan over medium high heat. Add ground beef, green chiles, salt and pepper, to taste. Cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks; drain excess fat.  I added a sprinkling of our homemade taco seasoning here for extra flavor.
  • In a large bowl, combine beef, corn, beans, 1/2 cup Monterey Jack cheese and 1/2 cup cheddar cheese.
  • To assemble the enchiladas, lay tortilla on a flat surface and spoon 1/4 cup of the beef mixture in the center. Roll the tortilla and place seam side down onto prepared baking dish. Repeat with remaining tortillas and beef mixture. Top with remaining enchilada sauce and cheeses.
  • Place into oven and bake until bubbly, about 20 minutes.
  • Serve immediately, garnished with cilantro, avocado, and green onions if you like!

Obsessions

Scenes From Our Weekend

Can I just say it is amazing what a weekend with good sunny weather does for the soul.  All the rain and cold here was putting me in a serious funk.  I feel rejuvenated!  
We had such a great weekend.
My parents were down here for the food and wine festival so I got to spend some time with them which I always love.
Sterling loves his Big Poppie!


My mom brought a bottle of the most delish Chardonnay- I really recommend it!


Friday night we ordered pizza- we really do this every Friday.  This week we tried out a new pizza, The BLT Pizza.  It was sooo good!  Locals it was from Pasianos our favorite pizza place on James Island.


Frances and Sterling have been so sweet together lately.  Melts my heart.


Saturday the weather was so awesome I took the kids for a picnic at Normandy Farms.  Sterling is like,  really mom I am trying to eat put the camera down.


We got our new shipment of Honest Diapers and I m pretty sure these leopard ones are my favorite!


Saturday we had a couples dinner out to celebrate all the birthdays in March (including mine)!
I was pumped to fit back in my regular jeans!

Sunday I went on my first run in basically a year.  It is time to tighten this body up!  It was painful but also felt so good!


Then we went on a boat ride the weather was just amazing!  It was Frances Moons first boat ride and she loved and yes she has a life jacket we were docked this was right before we took off:)


It was a fantastic week!
