I love a fresh corn salad, there is nothing better than fresh off the cob corn. Canned and frozen corn just don't compare. I made this recipe up about two years ago and make it frequently come the Summer months. You can always add any veggies you like and just use corn as the main base. All farm fresh ingredients and good for you! We served this as a side for our braised beef tacos this weekend. It was a killer combo! The salad will save but after two days it starts to get soggy, so I recommend making it the day you want to serve it. The dressing is really simple because I didn't want it to over power the vibrancy of the veggies. Add as much or as little dressing as you like.

|| S U M M E R C O R N S A L A D ||
- 6 ears of corn, husked
- 1 pint cherry tomatoes cut in halve
- 1-2 cups arugula
- 4 green onions sliced
- 1/2 yellow bell pepper diced
- 1/2 cup crumbled queso fresco cheese or feta
- 1/4 cup olive oil
- 3-4 tablespoons red wine vinegar
- salt and pepper to taste
Take the husks off the corn and wrap in foil. Bake in oven at 350 degrees about 20-25 mins just to slightly cook corn, you still want it to have a crunch. Let cool then slice the corn off. Mix in bowl with tomatoes, arugula, green onions, and bell pepper. Whisk together olive oil and red wine vinegar with salt and pepper. Drizzle over salad and top with cheese. Best served at room temperature.

I made your salad a few days ago and it was delicious! I used Trader Joe's crumbled feta with Mediterranean herbs as my cheese and it added some good flavors!!
