Easy Week Night Meal Ideas | Freezer Friendly + Under 20 Minutes + Crock Pot

I had a reader request to share some easy week night meal ideas.  My reader was a new mom and wanted meal ideas that were easy to make ahead and keep in the freezer, slow cooker meals or just quick prep time meals.  

Casseroles and lasagnas are always easy to make ahead and freeze.  Then at dinner time all you have to do is cook them.  Add a green salad and you have a tasty weeknight meal.  I also included some easy 20 minute and under meals as well.  Not necessarily meals you would freeze but just meals that are easy to whip together and don't take a lot of prep time. 

An easy short cut for any of the dishes that call for shredded chicken is to use a rotisserie chicken.  This saves so much time plus lets be honest I don't love dealing with raw chicken.  You don't have to dirty up a dish either cooking the chicken. 



This seriously takes less than 10 minutes to make.  You can serve this over pasta or with crusty bread.  it is only a few ingredients but full of flavor.  

These are super easy to make and freeze.  If you want to freeze them mold them into patties and lay them on a baking sheet lined with parchment paper.  Place the baking sheet in the freezer until they harden. Then you can remove them from the tray and place in a freezer ziploc bag and remove as needed.  Just make the fresh relish when you are ready to serve them.


I grew up eating this casserole and still love it.  It is not healthy but it is comfort food at it's finest.  This is a great one to make ahead and freeze.

I know lasagnas can take a bit of effort to prepare but they are really worth it and they save so well in the freezer.  You could easily divide this recipe in half and make 2 smaller lasagnas or one large one. 

Leave the avocado and jalapenos off if you decide to freeze this.  


If you want an easy week night dinner this one takes 5 minutes tops to toss together.  So easy and delicious.  

You could easily add ground beef to these if you want but they are really good without the meat.  These take about 10 minutes to make. 

This is one of my favorite slow cooker meals.  This beef is incredible.  It makes a ton so you could easily freeze some.  We use it for tacos and nachos.  

If you are craving Thai food this recipe was really easy to make.   It takes under 20 minutes.  While the noodles cook just scramble the eggs and whisk together the sauce and you have dinner! 


Quiches are my new go-to week night meal. Both of my kids will gobble up a quiche,  veggies and all so I consider that a winning dish.   You can whip a quiche together in 20 minutes tops and there are so many options.  I make up a new one every few weeks.  Last night we had chicken, roasted broccoli and smoked gouda.  

If you want to make a quiche and freeze it, I usually cook it part of the time until the egg solidifies about 25-30 minutes.  Then you can let it cool and cover with saran wrap and foil and freeze it. 




We almost prefer this to our tomato pie.  The addition of the zucchini and squash is really good in it.  Bake this partially and then freeze it. 


I find soups are a really easy one pot weeknight meal as well.  Most of these soups I made in a big pot on our stove but I am sure you could cook them in your slow cooker if you prefer.  If you do the slow cooker I would wait and add the pasta at the very end so it does not get soggy.

Obsession | Over The Knee Boots

I have lusted over these Stuart Weitzman Over the Knee Boots forever.  Every time I see someone wearing them I am convinced I need pair.  They look so good with everything.  But the price, not so much.




$800 is A LOT of money for a pair of shoes.    I get it they are an investment piece and if I lived somewhere with cooler temperatures I might would consider it but in Charleston we just don't have a ton of cool weather so I wasn't sure how often I would actually wear over the knee boots.  I wanted to find a cheaper option and I am thrilled with what I found.

Since I have been in Charlotte this past week we have spent a lot of time at the mall, especially Nordstrom.  I love department store shopping and so wish Charleston had a good department store.  I managed to find a way cheaper version of the Stuart Weitzman boots and I love them!  I didn't pack much because I assumed we would only be here two days not a week so I have been wearing these boots non-stop.


The boots are under $200 and everything else I am wearing is under $40!  
This is the sweater I mentioned over the weekend.  I bought the oatmeal and dark green colors.  Size down as it runs on the large side.  I am wearing an XS.  It is the perfect length to wear with leggings.  
The scarf is only $19 and I swear it looks way more expensive in person. It is a lightweight material and not too thick which is perfect for this time of the year.  Plus the black and cream go with everything.
The tie detail on the back of my boots is my favorite detail.
It looks like my color is currently sold out but they are still available in my exact same style in this gorgeous burgundy color.  The boots are seriously so comfortable and I found they ran TTS.  They have a small side zipper and are really easy to get on and off.

My lip color is the Chanel Milky Blueberry, I mentioned yesterday.  It is the perfect fall shade and it stays on forever!!

Scenes From Our Weekend

I hope everyone had a great weekend.  We are still in Charlotte, while our house didn't weather too much damage several power lines are down in our neighborhood in addition to some flooding.  We are hoping to have power restored Tuesday and be able to get back in town then.  I am sending my thoughts and prayers to all those affected by Matthew.  I know many people are still without power and have had major damage to their houses, cars and property.   We were lucky enough to have family nearby to stay with but I know everyone was not that lucky and many of you have been in and out of hotels.  
This is picture Matt sent us of our backyard, lots of limbs and debris that thankfully did not land on our house.  Lots of yard work is in our future.
The kids have really enjoyed being out of school and spending time with their cousins.

Friday my mom let the kid's get out all her Halloween decorations and decorate her house.  We used a few for Happy Hour.  This red wine is a constant favorite.  Oh that snack mix pictured below is from Reid's and it is a must if you are in Charlotte!

I had several questions about my lip and nail color on my instastories.

Friday night my sister and I went out for a girl's only dinner.  We were laughing that the last time just the two of us went out was probably 10 years ago before either of us were married! We snapped this picture before we headed out.  

We headed to Rooster's one of my favorite spots in Charlotte.  The food is always on point.

Taylor talked me into ordering bone marrow which made me want to gag but the kale salad was really good.  We also love Rooster's mac and cheese it is the stuff dreams are made of.

Several of you wanted the recipe for Cheesy Olives.  They are so easy and so darn good.

|| C H E E S Y  O L I V E S ||
- 1/2 cup margarine
- 2 cups shredded cheddar
- 1 cup all purpose flour
- 1/2 tsp salt
- green olives

Let margarine and shredded cheese come to room temperature.   Add in flour and salt and mix.  Mold around each olive and place on baking sheet.  Place in fridge for at least 30 minutes or longer.  Bake at 350 degrees 15 minutes.

The next morning Bojangles was in order.

Saturday was super dreary in Charlotte as the out skirts of Matthew brought lots of rain and wind.  We spent most of the day inside.   These are the leggings I went back to buy another color in I love them so much.


Sunday we took the kids' to a small pumpkin patch.
