Easy Wedge Salads


Sometimes I forget how much I love a wedge salad, probably because I don't eat them that often.  Matt wanted to grill steaks Sunday night and I immediately thought we need a wedge salad to go with our steaks.  There are a million different ways to make a wedge salad but this is our way.  Little fact about me I hate bottled salad dressing, I never buy it.  It tastes so processed and yuck to me.  You can make your own Ranch from scratch, but I swear by the Hidden Valley Ranch packets.  It is all the seasonings and you just add in mayo and milk.  It tastes so much better than the bottled kind- trust me!  You can do a vinaigrette or even Thousand Island with the salad if you don't like Ranch.  My dad likes to do half ranch half thousand island, the best of both worlds!   This salad is super easy but full of flavor!

|| E A S Y  W E D G E  S A L A D S ||

- Cherry tomatoes diced
- 1 package bacon cooked and crumbled ( I use the microwave kind)
- 1 head iceberg lettuce
- green onions sliced
- crumbled Gorgonzola cheese
- 1 packet Hidden Valley Ranch Dressing Mix
- 1 cup Mayo
- 1 cup milk

Whisk together Hidden Valley packet with mayo and milk and set in fridge. The dressing needs to sit in the fridge at least 30 minutes before you serve it, but longer is better.   Cut the Iceberg Lettuce in half and then half again, I like to serve quartered pieces.  A head will give you 8 quarters.  Assemble lettuce on serving platter and drizzle with ranch. Then top with tomatoes, onions, bacon, and cheese.  If you drizzle the ranch first it helps the toppings stay put on the lettuce!  Then drizzle with more Ranch!

Like you I typically hate bottled salad dressing...with one exception. Trader Joes low fat Parmesan Ranch. It is amazing and low fat/low cal!! It's a must try.

You should try Giada's recipe for gorgonzola dressing. It's fantastic! Love all the veggie toppings you added to your wedge salad. Yum!

Looks delicious! But, I gotta ask...how does one eat a wedge salad? They aren't something I grew up with, and I honestly wouldn't know what to do!

Yum! I sub plain greek yogurt for the mayo. Sometimes I even do 1/2 greek yogurt, half buttermilk to make it super yummy! I can't wait for my cleanse to be over with so I can eat dairy again! And bacon, and tomatoes, and lettuce. Ha!

I made a Wedge last night! we have the about once a week. My girls love them! I use homemade bleu cheese dressing on mine, so simple and easy to prepare!
