Sweet Potato Nibbles + Workout Outfit + Open Door Shop Giveaway


I made this appetizer for happy hour with my neighbors last night but it could totally serve as a main meal too.  The combo of sweet potatoes, goat cheese, bacon, pears and thyme is off the hook good.  And did I mention easy??  The hardest part of this is slicing and roasting the potatoes.  Such an easy and delicious app or main meal.

|| S W E E T  P O T A T O  N I B B L E S ||

- 1 large sweet potato sliced
- honey goat cheese
- 1 pear sliced
- 6 pieces of bacon, cooked and crumbled
- 2 tablespoons thyme

Peel and slice the sweet potatoes into 1 inch rounds.  Place in a bowl and toss with olive oil and salt and pepper.  Lay on a baking sheet.  Preheat oven to 350 roast about 15 minutes, then flip each slice over to cook evenly.  Cook about another 15 minutes.  Remove from the oven and let cool.

Lay on a platter and top with goat cheese, sliced pear. crumbled bacon, and thyme.  You can also drizzle with honey if you want,  
Serve warm or room temperature.

Yesterday's workout outfit, that turned into an all day outfit.  This tank and leggings are two of my favorites.  The leggings not only suck you in and are flattering but they are so comfy too.
