Watermelon Jalapeno Salad


This year I joined our local CSA and I just love it.  It is so fun to get a new basket each week filled with local veggies and fruit.  Last week there was a huge watermelon in our bag that I didn't want to go to waste.  We ate plenty of it sliced but decided to make the rest into a salad.  There is nothing like a perfectly ripe, juicy,  and sweet watermelon.   I have made watermelon salads before but never with jalapenos.  Trust me when I say this combination was a real winner.  The sweet watermelon paired with the spicy jalapeno and creamy feta was a flavor explosion.  This salad was so fresh and delicious.  I will say it doesn't save that well so I don't recommend making it and eating it all week.   I found it was best the first day, and you will probably want to devour the whole bowl the first day anyways.  Make this for your next Summer picnic, dinner, or party it will be a hit!

adapted via Love and Lemons

- Diced Watermelon
- 1/2 red onion sliced very thinly
- 1 avocado diced
- 2-3 jalapenos thinly sliced
- crumbled feta
- Mint
- Olive oil
-Juice of one lime

Whisk together olive oil and lime juice, if you want it really spicy add a few jalapeno slices to the dressing and let sit.  Lightly toss together all other ingredients In a bowl.  Drizzle with the dressing.  Best served room temperature.

I am putting this on my must make list. Although I am not sure my husband would be a fan with the jalapeños. I will just have to make it when he is out of town.

I'm not a huge fan of mint. Do you think cilantro or basil would work instead?
